It all comes down to money. Monorails are expensive and expanding the Disney World Monorail would cost a ton.

Hey, Disney, we don't care if you go bankrupt (not really we do care), you got a billion dollars in the bank, build some more monorail track (like to the Animal Kingdom Lodge) we'll all ride it. Trust me.
