We have reservations at Chef Mickey’s Buffet at 8:10a on Christmas eve 2010 but since the Magic Kingdom opens at 8am I would like to just show up for the Chef Mickey’s reservation early, around 7am. Will they give me a hassle (party of 3) for showing up for a reservation time an hour or more early at a buffet?

I can’t say that I’ve ever had this experience. I did show up once a whole day early to ‘Ohana once (oops) and yes, they did give me a little (just a little) hassle, but quickly pulled up my reservations and told me I needed to be at Teppan Edo in EPCOT. (We made it after a mad dash.)
My best guess is that at 7:00 am on Christmas Eve morning, there is about an 65% chance that you will be seated really close to 8:00. The only way you might get in earlier is if someone cancels or doesn’t show up. It does happen, but on holidays it is less likely.
Dad’s Bottom Line
Paul, the good thing is you have reservations. It’s possible you will get in early. Give it a try. The worst thing that could happen is you could have to sit in the concourse of the Contemporary and count how may monorails go by.
