Tonga Toast – The latest craze (in 1985)

Tonga Toast – it sounded so good… Everyone was eating it.

One of the things I wanted to try on our trip was Tonga Toast They were serving it (in 1985 at the Coral Island Coffee Shop at the Polynesian Village, now it’s served at Kona Cafe at the Polynesian Resort). I don’t remember where I had heard about it, but, it sounded great and I just had to try it.

Tonga Toast – Banana Stuffed French Toast

Wow, that sounded good.

This was so long ago that there was no reservation system. We just went to the Coral Island Coffee Shop at the Polynesian Village and got a seat. Mrs. Mom and I discussed what to order. This Tonga Toast stuff sounds good, Mrs. Mom said. I hear it’s great I said. So Mrs. Mom ordered the Tonga Toast and I ordered an omelette. (Yes, I chickened out.)

The food was delivered and it looked great. Mrs. Mom picked the bananas out of the Tonga Toast and started to pour syrup on it. I quickly grabbed a bite.

I’m not a chef, I don’t play one on TV, I didn’t stay at a Holiday Inn Express last night, but I do watch a lot of the Food Network, and Top Chef. Here’s is what I think the recipe for Tonga Toast is –


  • Bananas
  • 100 lbs. of sugar
  • Eggs
  • Butter
  • Cinnamon
  • Sweet Maple Syrup
  • Loaf of sourdough bread

How to make Tonga Toast

Cut bread into 4 inch slices. Slice banana and magically put into bread slice. Dip bread in beaten egg. Fry in butter until egg is done. Dip in sugar. Dust with cinnamon. Dip in sugar 4 more times. Serve warm with Sweet Maple Syrup on the side.

Wow! That stuff was sweet. Too sweet for Dear ‘Ole Dad.
